  • Fill a large pot with water and bring it to a boil.

Ingredients

For Braised Cabbage

  • 2 tbsp each of honey and red wine vinegar
  • 4 cups of red cabbage (thinly sliced)
  • 2 shallots (thinly sliced)
  • ¼ cup of orange juice (fresh)
  • 1 teaspoon of orange zest (grated)

For Parsnip Puree

  • A tablespoon of butter
  • ¼ cup of almond milk (unsweetened)
  • 2 cup of parsnips (peeled and chopped)
  • 6oz of boneless, chicken breasts (sautéed)

Directions

  • Combine cabbage ingredients with black pepper and half teaspoon of kosher salt in a large pan.
  • Mix these ingredients well and then place over medium heat. Stir it well when it begins to simmer. Reduce the heat and cover. Keep stirring occasionally for about half an hour or so.
  • Take a medium pot and cover parsnips with water in it. Bring it to a boil and cook for about 12 minutes or until it becomes tender. Drain it and place in a food processor with butter, almond milk, pepper, and salt. Puree until it becomes smooth.
